These za’atar roasted chickpeas are the crunchy, savory snack you didn’t know you needed. Perfect for tossing on salads, adding to grain bowls, or munching by the handful, they’re packed with flavor and come together in under 15 minutes using pantry staples and your air fryer.
Dry the chickpeas thoroughly with a clean kitchen towel or paper towels. (The drier they are, the crispier they'll get!). If you have the time, you can leave them to dry on the paper towel for 15 minutes.
Toss the chickpeas in a bowl with olive oil, za’atar, garlic powder, and salt.
Air fry at 400°F (200°C) for 12–15 minutes, shaking halfway through, until golden and crispy. I did hear some popping while it was cooking, but everything turned out good! No chickpea popcorn.
Cool slightly before serving. Enjoy warm or at room temperature!

Hint: Drying the chickpeas well is key! If they’re even a little damp, they’ll steam instead of crisp.Let the chickpeas cool completely before sealing in a container—this keeps them crispy instead of soggy.
